One morning in March 2018, a regular customer named Adrien Charpentier came in. He was 78, he used an oxygen tank, and his hands were weak.
He asked Evoni for help. She took his plate and cut his ham into small pieces for him.
She did not think anyone was watching. But another customer, Laura Wolf, took a photo and shared it on Facebook.
The picture went viral. People across the country were moved by a simple act of kindness from a young woman just doing her job.
Then Texas Southern University stepped in and gave Evoni a $16,000 scholarship. She planned to study business management.
The mayor of La Marque, Bobby Hocking, came to the Waffle House and proclaimed March 8, 2018, a day in her honor. That is the surprise you see in this video.
Sometimes the smallest kindness is the one that people remember the longest.
